Pijat sira is a platter of various cheese delicacies sheep's cheese, Istrian skuta cheese, gorgonzola, Grana Padana and mozzarella di bufala. Here in Peperoncino we serve this dish on a bed of rocket, with the addition of walnut kernels, few black and green olives and, of course, extra virgin olive oil.
With Istarski pijat we would recommend a glass of Istrian Teran or Cabernet Franc.
